The SAI series was created by Komin Yamada. In contrast to Global's other series, this one is made of 3-ply steel. The cutting layer, made of Cromova 18, is flanked by two softer steel layers. This is necessary to give more stability to the very hard cutting layer (59 HRC). The higher hardness leads to longer edge retention and is a novelty among Global's knife series. The hammered finish allows the knives to glide more easily through food. The balanced, specially contoured steel handle provides very convincing ergonomics and allows for fatigue-free cutting. Especially for professional chefs who have to meet stricter hygiene regulations, the seamless all-steel construction is very accommodating.
