The GS series consists of rather smaller knives with thinner blades. The knives of the GS series are characterized by their edgeless transition between handle and blade. Especially for professional chefs who have to meet stricter hygiene regulations, the seamless all-steel construction is very accommodating. The resistant, rust-resistant Cromova 18 blade steel has a hardness of 58 Rockwell. The blade is ground at approx. 17 degrees per side and is ideal for most tasks.
