When I enjoyed my first gin & tonic, I didn't realize where the journey would take me. After countless varieties and pairings, I was once served a gin & tonic with a citrus peel spiral I'd never seen before. It turned out to be bergamot and changed my views on gin forever.

Up until then, I had experimented with hundreds of botanicals and pairings. But now, bergamot, often described as a hybrid of sweet lime and bitter orange, had become my new passion. I wanted a simple, clear – but perfectly distilled taste. I was looking for a statement. What I found were complicated flavor compositions that read like a long blog post. So I decided to create this statement myself.

But instead of drawing inspiration from other gins, I looked to other bergamot products. Perfumes, teas, room fragrances, soaps, and so on. This is how I conveyed to my distillation partner what I meant by this idea of a statement.

For the gin itself, I sought out a citrus dealer in Vienna where I could select each fruit by hand – and by nose. What's special about bergamot is also that the fruit grows almost exclusively on a narrow strip of land along the Italian coast. But I didn't have to travel that far.

It took a lot of philosophizing and tasting until we arrived at the taste I was looking for. Then, after the first full batch, I wanted to make an even bolder statement. That was the birth of "Di Scala Dry Gin al Bergamotto Intenso." A gin primarily intended for gin & tonic, convincing through its simplicity.

It's a daydream of Tuscany. The Italian region from which my family originally hails. Mediterranean simplicity and warmth, paired with piquant fruit, remind us to step back once in a while and reflect on the statement we want to make to our world.
