Manufacturer: Suncraft
Model: MU-08
Knife type: Usuba, single bevel
Blade length: 17cm
Blade material: Molybdenum Vanadium Steel
Handle material: Bamboo Pakkawood
Intended use: The Usuba originated in Japan and was specifically developed for chopping vegetables. The wide blade also serves well as a "scoop" to transfer vegetables into the cooking pot. The single-bevel grind is even finer than a symmetrical edge but requires some getting used to.
